SUMMARY OF POSITION

The  Sommelier position  works in conjunction with the Wine Director to oversee and direct the day-to-day service and administrative operations of the department. A strong understanding of wine service mechanics and the ability to discuss wine eloquently and naturally in a wide variety of settings is needed. Equally necessary is a complementary knowledge of all things culinary and an ability to contextualize the cuisine and prima materia of the restaurant in relation to wine. Moreover, we look for those who are passionate, driven, and committed to the highest standards of hospitality, and take a humble approach to their work habits through ownership, diligence and integrity.

You will uphold the highest standards of service by developing, maintaining and establishing new Quince protocols and practices. Department implementation of all company policies & procedures as outlined in the Quince & Co. Employee Handbook.

 

POSITION REQUIREMENTS Overall Responsibilities:

  • Assist Wine Director in the overall operational management of the Wine Department
  • Uphold the highest standards of service in accordance with protocols and practices as outlined in the Quince & Co service manual.

Service/Operations

  • Provide wine service to the guests of Quince/Cotogna/Verjus and support the service staff during nightly dinner service
  • Assist in wine selections and service of the private dining program at Quince and on the Chef’s Table at Cotogna
  • Daily wine stocking of par levels- whites, red and sparkling at both Quince, Verjus and Cotogna
  • Make wine suggestions and pair wines with menu items. Communicate with chef directly as to the nature and flavors of each dish and match up with the appropriate wine profile
  • Update and produce wine lists, service documents, tasting menus daily, or as needed
  • In absence of wine director, represent the wine department at daily line ups
  • Educate staff on new wines, 86’d items, and one count list
  • Help educate staff on proper wine service, new wines, food and wine pairings
  • Daily pricing of tasting wines
  • Assist in maintaining physical inventory of the cellar; racking and restocking wines, processing deliveries

Education and Development

  • Attend and participate in-house tasting appointments with wine director
  • Maintain professional relationships with purveyors and wine industry professionals
  • Work closely with culinary teams to develop food and wine knowledge and pairings for staff education
  • Organize and present wine classes to staff
  • Assist in the training of new FOH hires as it relates to wine service and product knowledge
  • Uphold the Quince & Co handbook standards, protocols and procedures

Professional and Educational Development

  • Maintain professional education and continued wine studies
  • Participation in outside trade tastings and other educational seminars

Administrative

  • POS Management- Continually update database by adding new wines, removing 86’d wines and create new numbers when needed
  • Audit accuracy of all wine prices as they correspond to the wine list
  • Assist wine director and lead sommeliers in physical inventory on the first day of every month
  • Return emails, correspondence, phone calls as needed

Financial

  • Communicate with wine director/general manager on nightly sales- figures and product mix
  • Administer transfers and corked wines
  • Management of company property as well as personal (consignment) property
